This traditional farmhouse cheese has been made since 1980. It is a hearty, full-flavoured Cheddar styled cheese, drier in texture than other Cheddar's with flavours that are upfront, richly savoury and boozy. It is made with raw cow's milk and uses animal rennet. It is bound with cloth and matured for 12-14 months to create this full bodied artisan cheese. It is a naturally rinded product and the colour of the rind may have seasonal variations.
