Montgomery is one of the stronger traditional cheddar's that we stock in our counter. It is handmade and uses the unpasteurised milk of Friesian cows and is then matured for twelve months wrapped in muslin cloth on wooden shelves which leads to a deep, rich and nutty flavour. It is a naturally rinded cheese and the colour of the rind may have seasonal variations. Sometimes you may find a bit of blue in this cheddar. This is quite normal, and the cheese may even be tastier to you because of it.
