Rædwald (pronounced Redwold) is a Suffolk take on a traditional French Reblochon. It has the crunchy, toothsome rind and smooth oozing paste of a classic Reblochon.
Rædwald is a seasonal rind-washed cheese made on the makers Suffolk farm and only during the winter months, from the fresh warm afternoon milk of free-ranging Montbéliarde cows. Its flavours, aromas and characteristics are influenced by the rich winter milk and the diverse variety of grasses and herbs that grow in the beautiful Waveney River Valley.
This cheese has been created to use the rich, high cream milk that the cows produce in the depths of winter. The large surplus of milk produced after Christmas is too creamy to making Baron Bigod but makes this incredible Reblochon-style cheese. For Rædwald, the afternoon milk which is the very creamiest while the lighter morning milk is reserved for making Baron Bigod, which is tastiest when made with a lower-cream milk.
Rædwald is only available between January – April each year.
